This delicious salmon steak recipe features perfectly seared salmon steaks topped with a flavorful herb butter and parmesan cheese.

  • 4 8-oz salmon steaks (1 inch thick)
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3 tbsp unsalted butter (softened at room temperature)
  • 1 tbsp fresh parsley (chopped)
  • 1 tbsp fresh thyme (chopped)
  • 2 tbsp grated parmesan cheese
  • 1 tbsp olive oil
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat the oven to Broil on High. Pat the salmon steaks dry with paper towels to remove excess moisture. Season both sides generously with sea salt, black pepper, and garlic powder.
  2. In a small bowl, mash together the softened butter, chopped fresh parsley, and fresh thyme until well combined. Set aside near the stove.
  3. Heat the olive oil in a very large cast iron skillet over medium-high heat, swirling it to coat the pan. Place the salmon steaks in a single layer and sear for about 3 minutes until golden.
  4. Carefully flip the salmon steaks and sear for an additional 2 minutes on the other side.
  5. Add dollops of the herb butter over the salmon steaks. Spread it gently to coat the top and sprinkle the grated parmesan cheese over the buttered salmon.
  6. Transfer the skillet to the oven, placing it about 6 inches from the broiler. Broil for 1 to 3 minutes until the salmon reaches an internal temperature of 135-140°F.
