Ingredients

Scale
  • 1 lb ground turkey
  • 2 cups prepared stuffing
  • 1/2 cup dried cranberries
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 1/4 cup chicken broth
  • 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Olive oil or melted butter for brushing
  • Fresh parsley, chopped
  • Gravy, for serving

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, stuffing, cranberries, celery, onion, Parmesan, sage, thyme, salt, and pepper. Mix gently.
  3. Add the beaten egg and chicken broth. Stir to combine. If mixture feels dry, add more broth a tablespoon at a time. Let rest for 5 minutes.
  4. Scoop into golf ball-sized portions using a cookie scoop or hands. Place in muffin tin or on sheet pan.
  5. Brush with olive oil or butter. Bake for 20–25 minutes, until golden and internal temp reaches 165°F (74°C).
  6. Optional: Broil for last 2 minutes for extra crispiness.
  7. Let cool slightly before removing.
  8. Drizzle with gravy and garnish with fresh parsley before serving.
