  • 1 cup chopped yellow onion
  • 1 packet chili seasoning mix
  • ½ cup beef broth or water
  • 1 can kidney beans (drained)
  • ½ bag Fritos corn chips
  • 3 cups shredded cheese (Mexican blend or cheddar)
  • 1 cup shredded lettuce
  • 1 small jalapeños
  • 1 cup chopped tomatoes
  • 1 cup sour cream
  • 1 bunch green onions
  • 1 bunch cilantro
  • 1 cup guacamole

Instructions

  1. In a large skillet over medium heat, brown 1 pound of ground beef along with 1 cup of chopped yellow onion until the beef is no longer pink. Drain any excess fat.
  2. Stir in 1 packet of chili seasoning mix, ½ cup of beef broth or water, and 1 can of drained kidney beans. Combine well.
  3. Allow the mixture to simmer for about 15 minutes, stirring occasionally until thickened and heated through.
  4. In a large serving dish, layer ½ bag of Fritos corn chips, spoon the beef mixture over the chips, and top with 3 cups of shredded cheese.
  5. Optional: Before serving, add your favorite toppings like shredded lettuce and jalapeños for extra flavor.
