  • 1 teaspoon vanilla extract
  • 3 large eggs

  • 2 cups fresh strawberries, hulled and halved
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional for thickening)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, melted butter, and sugar for the crust. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  3. Beat softened cream cheese until smooth. Gradually add sugar and mix until creamy.
  4. Incorporate sour cream and vanilla extract, mixing until fully blended.
  5. Add eggs one at a time, beating just until combined after each addition. Do not overmix.
  6. Pour the filling over the cooled crust in the springform pan. Smooth the top.
  7. Bake for 45-50 minutes, until the center is set but slightly jiggly.
  8. Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour.
  9. Transfer to the refrigerator to cool completely, ideally overnight.
  10. Combine strawberries, sugar, and lemon juice in a saucepan. Cook until strawberries release juices. Stir in cornstarch mixture if a thicker topping is desired.
  11. Let the strawberry topping cool slightly.
  12. Remove the sides of the springform pan. Top the cheesecake with the strawberry mixture.
