- 1/2 cup Granulated sugar
- 1 tablespoon Lemon juice
- 1 teaspoon Vanilla extract
- 1 pinch Salt
- 1 can Canned coconut cream
- 2 cups Very strong coffee
- 16 cookies Vegan-friendly cookies
- 1 tablespoon Cocoa powder
- Blend the firm silken tofu until smooth and creamy, it will be the base of your mascarpone layer.
- Add the granulated sugar, lemon juice, vanilla extract, and a pinch of salt if using. Blend until well combined.
- Gently fold in the canned coconut cream into the tofu mixture until fully incorporated.
- Brew very strong coffee and pour it into a shallow dish for soaking the cookies.
- Quickly dip each cookie into the coffee, avoiding soaking to keep them firm.
- Layer the dipped cookies in a serving dish, adding a layer of the mascarpone mixture on top. Repeat until all ingredients are used.
- Cover the dish and refrigerate for at least a few hours to set.
- Dust the top layer with cocoa powder before serving for decoration and flavor.
