Easy Vegan Tiramisu That Will Wow Your Taste Buds

Ingredients

  • 1 block Firm silken tofu
  • 1/2 cup Granulated sugar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1 can Canned coconut cream
  • 2 cups Very strong coffee
  • 16 cookies Vegan-friendly cookies
  • 1 tablespoon Cocoa powder

Instructions

  1. Blend the firm silken tofu until smooth and creamy, it will be the base of your mascarpone layer.
  2. Add the granulated sugar, lemon juice, vanilla extract, and a pinch of salt if using. Blend until well combined.
  3. Gently fold in the canned coconut cream into the tofu mixture until fully incorporated.
  4. Brew very strong coffee and pour it into a shallow dish for soaking the cookies.
  5. Quickly dip each cookie into the coffee, avoiding soaking to keep them firm.
  6. Layer the dipped cookies in a serving dish, adding a layer of the mascarpone mixture on top. Repeat until all ingredients are used.
  7. Cover the dish and refrigerate for at least a few hours to set.
  8. Dust the top layer with cocoa powder before serving for decoration and flavor.
