8 cups Sliced Yellow Squash
1 cup Diced Sweet Onion
2 cups Vegan Cheddar Cheese Shreds
½ cup Vegan Sour Cream
½ cup Vegan Mayo
3 tablespoons Vegan Butter
2 cups Crushed Gluten-Free Cracker Crumbs
Salt to taste
Pepper to taste
Paprika to taste
Dried Thyme to taste
Instructions
Preheat your oven to 350°F (175°C).
Melt 1 tablespoon of vegan butter in a large skillet over medium heat.
Sauté the diced sweet onion until it’s translucent, about 3-4 minutes.
Add the sliced yellow squash to the skillet. Cook until tender, about 5-7 minutes.
Combine the cooked squash and onion in a large mixing bowl. Mix in the vegan cheddar cheese shreds, vegan sour cream, and vegan mayo, blending everything until it’s creamy and well incorporated.
Mix the crushed gluten-free cracker crumbs with the remaining vegan butter and seasonings in a separate bowl.
Spread the squash mixture into a baking dish, and top it with the cracker crumb mixture.
Bake for 25-30 minutes or until the top is golden brown and bubbly.
