Delicious Vegan Southern Squash Casserole that’s gluten-free and allergy-friendly.

Ingredients

  • 8 cups Sliced Yellow Squash
  • 1 cup Diced Sweet Onion
  • 2 cups Vegan Cheddar Cheese Shreds
  • ½ cup Vegan Sour Cream
  • ½ cup Vegan Mayo
  • 3 tablespoons Vegan Butter
  • 2 cups Crushed Gluten-Free Cracker Crumbs
  • Salt to taste
  • Pepper to taste
  • Paprika to taste
  • Dried Thyme to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 1 tablespoon of vegan butter in a large skillet over medium heat.
  3. Sauté the diced sweet onion until it’s translucent, about 3-4 minutes.
  4. Add the sliced yellow squash to the skillet. Cook until tender, about 5-7 minutes.
  5. Combine the cooked squash and onion in a large mixing bowl. Mix in the vegan cheddar cheese shreds, vegan sour cream, and vegan mayo, blending everything until it’s creamy and well incorporated.
  6. Mix the crushed gluten-free cracker crumbs with the remaining vegan butter and seasonings in a separate bowl.
  7. Spread the squash mixture into a baking dish, and top it with the cracker crumb mixture.
  8. Bake for 25-30 minutes or until the top is golden brown and bubbly.
