- 5 large eggs (separated yolks and whites)
- 1 cup whole milk
- 1 cup granulated sugar
- 1 teaspoon ube extract
- 1 cup ube halaya (ube jam)
- 1 cup evaporated milk
- 1 cup condensed milk
- 1 cup coconut milk
- 1 cup heavy whipping cream
- 1/2 cup coconut milk (whipped topping)
- Preheat your oven to 350°F (175°C). Grease your preferred cake pan to ensure easy release after baking.
- Combine flour, baking powder, and salt in a mixing bowl. Whisk together until evenly mixed.
- Beat egg yolks and granulated sugar together until creamy and light.
- Mix in the whole milk and ube extract gradually into the yolk mixture, stirring gently.
- Fold the dry mixture into the wet ingredients until just combined.
- Whip the egg whites until stiff peaks form. Fold gently into the batter.
- Pour the batter into the prepared cake pan and bake for about 25-30 minutes.
- Cool the cake completely in the pan on a wire rack.
- Mix together evaporated milk, condensed milk, and coconut milk to make the tres leches soak.
- Poke holes all over the cooled cake using a fork.
- Pour the tres leches mixture gradually over the cake, allowing it to soak in.
- Refrigerate the soaked cake for several hours, ideally overnight.
- Whip the heavy cream until fluffy and spread it over the top of the cake before serving.
