Delicious Ube Tres Leches Cake That’s a Dreamy Delight

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 5 large eggs (separated yolks and whites)
  • 1 cup whole milk
  • 1 cup granulated sugar
  • 1 teaspoon ube extract
  • 1 cup ube halaya (ube jam)
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 1 cup coconut milk
  • 1 cup heavy whipping cream
  • 1/2 cup coconut milk (whipped topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your preferred cake pan to ensure easy release after baking.
  2. Combine flour, baking powder, and salt in a mixing bowl. Whisk together until evenly mixed.
  3. Beat egg yolks and granulated sugar together until creamy and light.
  4. Mix in the whole milk and ube extract gradually into the yolk mixture, stirring gently.
  5. Fold the dry mixture into the wet ingredients until just combined.
  6. Whip the egg whites until stiff peaks form. Fold gently into the batter.
  7. Pour the batter into the prepared cake pan and bake for about 25-30 minutes.
  8. Cool the cake completely in the pan on a wire rack.
  9. Mix together evaporated milk, condensed milk, and coconut milk to make the tres leches soak.
  10. Poke holes all over the cooled cake using a fork.
  11. Pour the tres leches mixture gradually over the cake, allowing it to soak in.
  12. Refrigerate the soaked cake for several hours, ideally overnight.
  13. Whip the heavy cream until fluffy and spread it over the top of the cake before serving.
