  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed, and drained)
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado, lime wedges

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the ground turkey to the skillet. Cook until browned and no longer pink, breaking it apart with a spatula (about 5-7 minutes).
  3. Add the diced onion and bell pepper. Sauté until the vegetables are tender (about 3-4 minutes).
  4. Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for an additional minute until fragrant.
  5. Add the diced tomatoes, corn, and black beans to the skillet. Stir well to combine all ingredients.
  6. Let the mixture simmer for 5-10 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.
  7. If desired, top the skillet with shredded cheese and cover the skillet until the cheese melts.
  8. Once everything is cooked through and flavors are well combined, remove from heat.
