Delicious Tuna Beetroot Tortilla Wraps for a Fresh Twist

  • 2 pieces Beetroot Tortillas
  • 1 can Canned Tuna Chunks
  • 10 pieces Cherry Tomatoes
  • 1 cup Fresh Arugula
  • 5 leaves Fresh Peppermint
  • 1/2 cup Canned Corn
  • 1/2 piece Red Onion
  • 1 teaspoon Ground Black Pepper or Lemon Pepper
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Sweet Chili Sauce

Instructions

  1. Warm the beetroot tortillas in a skillet over medium heat for about 30 seconds on each side.
  2. Open the canned tuna and drain the brine thoroughly, then place it in a mixing bowl.
  3. Slice the cherry tomatoes in half and gently add them to the bowl with the tuna.
  4. Toss in the fresh arugula, peppermint leaves, canned corn, and diced red onion.
  5. Sprinkle in ground black or lemon pepper according to your taste.
  6. Fold in the mayonnaise and sweet chili sauce until well combined.
  7. Place a generous amount of the tuna mixture on each beetroot tortilla and roll them up snugly.
