  • 2 large potatoes, peeled and cubed
  • 1 1/2 cups all-purpose flour, plus extra for dusting
  • 2 tablespoons butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • A little water (if needed)
  • Butter or oil for frying

Instructions

  1. Peel and cube the potatoes, then place them in a large pot of cold, salted water. Bring to a boil and cook for 10–15 minutes, until tender. Drain and mash until smooth.
  2. In a large bowl, combine mashed potatoes, flour, baking powder, salt, and pepper. Add melted butter and mix well. If the dough is too dry, add a little water until it forms a smooth, soft dough.
  3. Transfer the dough to a floured surface and roll it out to about 1/2-inch thick. Cut into 4 wedges.
  4. Heat a skillet or griddle over medium heat and add butter or oil. Cook each wedge for 3–4 minutes on each side, or until golden brown and crispy.
  5. Serve hot with a traditional Irish breakfast or enjoy with butter and jam.
