  • 11-ounce packet cheddar bay biscuit mix
  • 2 tablespoons butter
  • Seasoning packet from cheddar bay biscuit mix

Instructions

  1. Melt 2 tablespoons of butter in a large pot over medium heat. Add the chopped sweet onion and cook until translucent and soft. Stir in 3 tablespoons of all-purpose flour and cook, stirring constantly for 1 minute to create a roux.
  2. Slowly pour in 3 cups of chicken stock and the 43.5 ounces of canned diced tomatoes with their liquid, stirring until smooth. Bring to a boil, then reduce heat to a simmer. Season with 1 teaspoon sugar, 3/4 teaspoon coarse salt, and 1/4 teaspoon ground black pepper.
  3. Optional: For a smoother texture, puree portions of the soup in a blender until smooth. Return pureed soup to the pot and warm over low heat to a gentle simmer.
  4. Prepare the cheddar bay biscuit mix according to package instructions. Drop spoonfuls of the batter into the simmering soup, spacing them evenly. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
  5. While dumplings cook, melt 2 tablespoons of butter and mix in the seasoning packet from the biscuit mix. Once dumplings are done, brush this butter mixture over their tops. Serve the tomato soup with cheddar bay dumplings hot.
