  • 2 small Mini sweet potatoes (Regular potatoes can be substituted)
  • 1 tbsp Butter (Olive oil for dairy-free option)
  • 1 tbsp Brown sugar (Coconut sugar can be used)
  • 1 handful Marshmallows (Vegan versions optional)
  • 1 tsp Salt
  • 1 tsp Pepper (Freshly cracked is best)
  • 1 tbsp Fresh herbs (rosemary or thyme) (Enhances flavor)

Instructions

  1. Season your turkey cut generously with salt, pepper, and fresh herbs like rosemary or thyme. Roast it in a preheated oven at 375°F until it’s cooked through and golden brown, about 25-30 minutes.
  2. While the turkey is roasting, bring a pot of water to a boil. Add your mini sweet potatoes and cook until they’re tender, about 15 minutes. Drain and let them cool slightly.
  3. In a bowl, mash the cooked sweet potatoes with butter, brown sugar, and a pinch of salt until creamy and smooth.
  4. Layer your mashed sweet potatoes in a small baking dish. Top with marshmallows and broil in the oven for about 2-3 minutes, watching closely until the marshmallows turn golden and gooey.
