6 lbs beef brisket
2 tablespoons neutral oil
½ cup water
¼ cup soy sauce
¼ cup rice vinegar
¼ cup brown sugar
4 tablespoons sesame oil
3 tablespoons tomato paste
3 inches ginger, sliced thick
4 cloves garlic, lightly smashed
1 teaspoon black pepper
Instructions
Begin by heating the neutral oil in your pressure cooker over medium-high heat. Add the cubed brisket and sear until browned on all sides, about 5-7 minutes.
In a separate bowl, combine the water, soy sauce, rice vinegar, brown sugar, sesame oil, tomato paste, ginger, garlic, and black pepper. Stir until well blended and the brown sugar is dissolved.
Pour the braising liquid over the seared brisket in the pressure cooker. Give everything a good stir to ensure the beef is well coated and the flavors are combined.
Lock the lid in place and cook on high pressure for 60 minutes. Allow for a natural pressure release for 10-15 minutes before carefully releasing any remaining pressure.
Once the pressure is released, open the lid and check the brisket. It should be fork-tender; if not, give it an extra 10 minutes on high pressure.
