- 2 cups sweet potatoes, diced
- 2 tablespoons olive oil (for sautéing)
- 1 pound breakfast sausage (spicy or mild variety)
- 1 medium red onion, diced
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 teaspoon minced garlic
