  • 2 cups sweet potatoes, diced
  • 2 tablespoons olive oil (for sautéing)
  • 1 pound breakfast sausage (spicy or mild variety)
  • 1 medium red onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 teaspoon minced garlic
  • to taste salt
  • to taste pepper
  • 2 tablespoons chopped fresh parsley
  • 4 fried eggs (for topping)

Instructions

  1. Boil sweet potatoes until tender, about 15-20 minutes. Drain and set aside.
  2. Heat 2 teaspoons of olive oil in a skillet over medium heat. Add breakfast sausage and brown for 5-7 minutes.
  3. Add diced red onion, red bell pepper, and green bell pepper to the skillet. Sauté for 4-5 minutes until softened.
  4. Stir in minced garlic and cooked sweet potatoes. Season with salt and pepper; mix well.
  5. Cook until heated through, about 3-4 minutes. Sprinkle chopped parsley on top.
  6. Serve topped with a fried egg.
