  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice
  • 2 cups beef broth or water
  • 1/2 teaspoon salt
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 teaspoon paprika
  • Salt to taste
  • Chopped cilantro
  • Diced tomatoes
  • Sliced green onions
  • Avocado slices

Instructions

  1. Combine rice, broth (or water), and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer 15–18 minutes until tender. Fluff with a fork.
  2. Rub steak with olive oil and seasonings. Cook in a hot skillet 4–5 minutes per side. Rest, then slice thinly against the grain.
  3. Melt butter, stir in flour, and cook 1 minute. Whisk in milk and cook until thickened. Add cheeses and paprika, stirring until smooth. Season with salt.
  4. Spoon rice into bowls, top with sliced steak, and drizzle with warm queso sauce.
  5. Add desired toppings and serve immediately.
