Steak Bites with Sweet Potatoes and Peppers is an incredible one-pan meal featuring seared steak bites, caramelized sweet potatoes, and tender-crisp bell peppers.

  • 1.52 lbs boneless steak (sirloin, ribeye, or top round), cut into 1-1.5 inch cubes
  • 2 large sweet potatoes, peeled and cut into 11.5 inch cubes
  • 23 bell peppers (various colors), cut into 1-inch pieces
  • 1 medium red onion, sliced into wedges or 1-inch chunks
  • 45 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1.5 tsp sea salt (for steak)
  • 1 tsp freshly ground black pepper (for steak)
  • 1 tsp garlic powder (for steak)
  • 1 tsp onion powder (for steak)
  • 1 tsp smoked paprika (for steak)
  • ½ tsp dried oregano (for steak)
  • ¼ tsp cayenne pepper (optional, for steak)
  • 1 tsp sea salt (for vegetables)
  • ¾ tsp freshly ground black pepper (for vegetables)
  • ½ tsp dried thyme (for vegetables)
  • ½ tsp dried rosemary (for vegetables)
  • ¼ tsp brown sugar (optional, for vegetables)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Pat steak dry. Cut against the grain into 1-1.5 inch cubes. In a bowl, combine steak with seasonings and 1-2 tbsp olive oil. Toss until coated. Set aside for 10-15 minutes.
  3. Peel and cut sweet potatoes into 1-1.5 inch cubes. In a large bowl, add olive oil, garlic, and seasonings. Toss to coat.
  4. Wash and cut bell peppers into 1-inch pieces. Peel and slice red onion. Add to sweet potato mixture and toss together.
  5. Spread seasoned vegetables on baking sheets. Roast for 15 minutes.
  6. Stir vegetables, spread steak bites over them, and roast for another 10-15 minutes until steak is at desired doneness and sweet potatoes are tender.
  7. Let rest for 5 minutes. Transfer to a serving platter. Garnish and serve with lemon wedges if desired.
