2 fillets Salmon Fillets (fresh or thawed frozen)
3 tablespoons Sriracha (adjust to spice preference)
2 tablespoons Honey (or maple syrup for a vegan option)
2 tablespoons Soy Sauce (or tamari for gluten-free)
2 cloves Garlic (minced)
1 tablespoon Rice Vinegar (or apple cider vinegar)
2 cups Cooked White Rice (or brown rice, jasmine rice, or quinoa)
1 cup Sliced Cucumber (or bell peppers or zucchini)
1 cup Shredded Carrots (or radishes)
2 tablespoons Sesame Seeds
2 stalks Green Onions (or chives)
Instructions
In a mixing bowl, combine sriracha, honey, soy sauce, minced garlic, and rice vinegar until well blended.
Pat the salmon fillets dry with a paper towel and place them skin-side down on a foil-lined baking sheet. Brush the glaze generously over the top of each fillet.
Preheat your broiler on high and place the salmon under the broiler for about 8-10 minutes, watching closely until the glaze caramelizes.
Scoop cooked rice into serving bowls and place the glazed salmon fillets on top, adding sliced cucumbers and shredded carrots.
Sprinkle sesame seeds and chopped green onions over the bowls for presentation. Optionally, drizzle with extra glaze or squeeze fresh lime juice.
