These spicy chicken buns are soft, fluffy, and packed with a flavorful marinated chicken filling. Perfect as a savory snack or a hearty meal.

  • 2 1/4 tsp instant fast action yeast (7 g)
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 1/4 cup milk
  • 1 egg
  • 1/4 cup softened butter
  • 4 cups flour
  • 500 g bite size boneless chicken
  • 4 tbsp yogurt
  • 1 tbsp ginger garlic paste
  • 1 tbsp coriander powder
  • 1 tbsp cumin powder
  • Salt to taste
  • 1.5 tsp red chilli powder
  • 1/2 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 cup sliced onions
  • 1/2 lemon juice
  • 1 tbsp oil
  • 3/4 cup melted butter
  • 1 tbsp garlic powder
  • 1 tsp dried parsley
  • Egg wash (or milk wash) for brushing

Instructions

  1. In a bowl, combine yeast, sugar, salt, milk, egg, softened butter, and flour. Mix using a spatula until ingredients roughly combine. Transfer to a lightly floured surface and knead for 10 to 15 minutes until the dough is smooth and no longer sticky. Cover the dough with a damp kitchen towel and allow it to proof in a warm place for 60 to 90 minutes until it doubles in size.
  2. In a separate bowl, marinate the bite-sized boneless chicken pieces with yogurt, ginger garlic paste, coriander powder, cumin powder, salt, red chilli powder, garam masala, turmeric powder, sliced onions, lemon juice, and oil. Let it sit for 15 to 20 minutes to absorb the flavors.
  3. Heat a pan over medium heat and cook the marinated chicken until tender and fully cooked through, stirring occasionally. Once cooked, set the chicken aside to cool completely.
  4. After the dough has doubled in size, punch it down and divide it into 12 equal portions. Shape each portion into a ball.
  5. Roll each dough ball into a small circle using a rolling pin. Place about 2 tablespoons of the cooked chicken filling in the center. Gather the edges together and pinch to seal the filling inside. Roll gently between your palms to create a smooth bun. Repeat for all buns.
  6. Place the filled buns on a baking tray lined with parchment paper. Cover with a damp kitchen towel and let them proof for another 30 minutes in a warm place, allowing them to rise again.
  7. During the final 20 minutes of proofing, preheat your oven to 175°C (350°F).
  8. Brush the tops of the buns with egg wash or milk wash for a golden and glossy finish. Bake in the preheated oven for 20 to 25 minutes until the buns are golden brown and cooked through.
  9. While the buns bake, mix melted butter with garlic powder and dried parsley until well combined.
  10. Once out of the oven, generously brush each bun with the garlic butter sauce. Serve warm and enjoy your spicy chicken buns!
