  • 2 pounds hickory wood chips (Add smoky flavor to the roast.)
  • 4 pounds standing rib roast, bone in (The bone adds flavor and moisture.)
  • ½ cup steak seasoning (Enhances the natural beef flavor.)
  • 1 cup bourbon whiskey (Adds depth and sweetness to the dish.)

Instructions

  1. Arrange the charcoal briquets and soak the hickory wood chips in water for about 30 minutes.
  2. Rub the steak seasoning all over the standing rib roast and let it sit at room temperature for about 30 minutes.
  3. Preheat the grill or smoker to a consistent temperature of 225°F.
  4. Add the hickory wood chips to the firebox and position the roast in the center of the grill/smoker.
  5. Mix the bourbon whiskey with a bit of water and place it on the grill for flavor.
  6. Monitor the internal temperature, cooking until it reaches about 130°F for medium rare.
  7. Store leftover roast in an airtight container in the fridge for up to 3 days.
