- 1½ lbs boneless, skinless chicken breasts or thighs
- 3 bell peppers (mixed colors), thinly sliced
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 4 cups chicken broth
- 1 tablespoon olive oil
