Slow Cooker Chicken Fajita Soup is a cozy, flavor-packed meal inspired by classic Tex-Mex chicken fajitas.

  • lbs boneless, skinless chicken breasts or thighs
  • 3 bell peppers (mixed colors), thinly sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons fajita seasoning (or chili powder, cumin, paprika, garlic powder blend)
  • Salt and black pepper, to taste
  • Fresh lime juice (optional, for serving)

Instructions

  1. Place chicken in the slow cooker. Add sliced bell peppers, onion, and garlic on top.
  2. Add diced tomatoes, chicken broth, olive oil, and fajita seasoning. Stir gently to combine.
  3. Cover and cook on LOW for 6 hours, or until chicken is fully cooked and tender.
  4. Remove chicken, shred with two forks, then return it to the soup.
  5. Stir well, adjust seasoning if needed, and add lime juice if desired.
  6. Serve hot with optional toppings like avocado, sour cream, or tortilla strips.
