These Shredded Beef Burritos are an easy and delicious meal featuring tender Mexican shredded beef, melting Monterey Jack cheese, vibrant corn and black beans, plus flavorful Mexican red rice, all wrapped in soft flour tortillas.

  • 8 large extra soft flour tortillas (10″/26cm)
  • 1 1/2 to 2 cups shredded Monterey Jack cheese
  • 3 to 4 cups Mexican shredded beef plus sauce (tossed or separated)
  • 2 cups Mexican red rice
  • 400g (14oz) can corn kernels, drained
  • 400g (14oz) can black beans, drained

Instructions

  1. Microwave half the tortillas very briefly for about 15 seconds to soften them and prevent cracking when rolling.
  2. Place one tortilla on your work surface and cover the remaining tortillas with a tea towel to keep warm and pliable.
  3. Layer 1 1/2 to 2 tablespoons of shredded cheese down the center of the tortilla, followed by about 1/3 cup of shredded beef, then add some corn kernels, black beans, and finish with approximately 1/4 cup of Mexican red rice.
  4. Carefully roll the tortilla tightly around the filling to enclose everything, then wrap it in foil to hold the shape together.
  5. If serving right away, heat a skillet over medium heat and cook each burrito for 4 to 5 minutes per side until the tortilla is golden brown and the filling is warmed through.
  6. Wrap burritos in foil and place them in the freezer. To reheat, bake frozen burritos with foil at 350°F (180°C) for 40 to 45 minutes or thaw and cook in a skillet as above. Microwaving is possible but may result in a less crispy tortilla.
