8 bone-in, skin-on chicken thighs
1/3 cup pure maple syrup
2 tablespoons Dijon mustard
2 tablespoons soy sauce (low sodium preferred)
1 tablespoon apple cider vinegar
4 garlic cloves, minced
1 teaspoon smoked paprika
1/2 teaspoon crushed red pepper flakes (optional)
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
Fresh chopped parsley (optional, for garnish)
Instructions
In a medium bowl, whisk together maple syrup, Dijon mustard, soy sauce, apple cider vinegar, garlic, smoked paprika, red pepper flakes, and olive oil until well combined.
Pat chicken thighs dry and season with salt and pepper.
Pour two-thirds of the glaze over the chicken and toss to coat. Marinate for 15–30 minutes (optional).
Preheat oven to 400°F (200°C). Line a sheet pan with foil or parchment.
Arrange chicken thighs skin side up on the pan without overlapping.
Roast for 35–40 minutes, basting halfway with reserved glaze, until internal temp reaches 175°F.
Remove from oven, brush with remaining glaze, and let rest 5 minutes.
Garnish with parsley and serve warm.
Notes
For a spicier dish, increase red pepper flakes.
Serve with your choice of sides like roasted vegetables or rice.
