Hearty Seaweed Egg Drop Soup to Warm Your Soul

  • 3 pcs eggs
  • 1 teaspoon neutral cooking oil
  • 2 stalks scallions
  • 1 tablespoon papery dried shrimp
  • 1.5 tablespoons light soy sauce
  • 0.5 tablespoons black rice vinegar
  • 1 teaspoon sesame oil
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground white pepper

Instructions

  1. Soak the dried laver seaweed in warm water until it becomes soft, taking about 5-10 minutes. Once softened, gently drain and set aside to prepare for mixing.
  2. Beat the eggs in a bowl and then mix in the soaked seaweed, finely chopped scallions, dried shrimp, light soy sauce, black rice vinegar, sesame oil, salt, and white pepper. Ensure everything is well combined until the mixture looks smooth.
  3. Heat the neutral cooking oil in a skillet over medium heat until shimmering, which should take about 1-2 minutes.
  4. Pour the egg mixture into the skillet, spreading it gently over the surface. Cook until the edges begin to set and lift slightly, usually within 2-3 minutes.
  5. Lift the edges of the omelette gently as it cooks, allowing the uncooked egg to flow underneath for even cooking.
  6. Fold the omelette in half once the top is nearly set, letting it cook for another minute, then serve hot and enjoy the comforting flavors!
