- 8 oz cream cheese, softened
- 1/2 cup grated parmesan cheese
- 4 cups chicken broth
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp fresh parsley, chopped (plus more for garnish)
- In a large soup pot over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into crumbles.
- Add the chopped onion and sauté until translucent, about 4–5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Simmer for 10–15 minutes.
- Reduce the heat to low and stir in the cream cheese in small chunks, whisking until fully melted and incorporated.
- Add the heavy cream and parmesan cheese. Stir gently until smooth and heated through.
- Season with salt, pepper, and red pepper flakes to taste.
- Serve hot, garnished with fresh parsley and extra parmesan if desired.
