1 cup Sushi rice
2 tablespoons Rice wine vinegar
500 grams Salmon belly pieces
3 tablespoons Soy sauce / tamari (Use tamari for gluten-free)
1 teaspoon Garlic powder
2 tablespoons Toasted sesame oil
1 tablespoon Brown sugar
1 medium Avocado
1 tablespoon Nori Furikake
2 tablespoons Japanese mayonnaise
1 medium Cucumber
1 clove Garlic (Minced)
1 teaspoon Ginger (Freshly grated)
1 tablespoon Toasted sesame oil
1 teaspoon Brown sugar
1 bunch Garnishing micro herbs (Optional for freshness)
Instructions
Cook the sushi rice according to package instructions. Rinse under cold water until clear, then let simmer until tender and sticky.
Mix the marinade in a bowl with rice wine vinegar, soy sauce or tamari, garlic powder, toasted sesame oil, and brown sugar. Stir until sugar dissolves.
Marinate the salmon belly pieces in the mixture for about 10 minutes.
Cook the salmon in a skillet over medium heat for 4-5 minutes on each side until fully cooked.
Slice the avocado into half-moons.
Prepare the cucumber salad by mixing sliced cucumber, minced garlic, grated ginger, rice wine vinegar, toasted sesame oil, and brown sugar in a bowl.
Assemble your bowl starting with sushi rice, then add cooked salmon, avocado, Nori Furikake, and Japanese mayonnaise.
Garnish with micro herbs and serve cucumber salad on the side.
