  • 2 Cornish game hens (20 to 24 ounces each)
  • 8 fresh sage leaves
  • 2 lemon wedges
  • 4 tablespoons melted butter
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 4 cloves minced garlic
  • 1 teaspoon kosher salt or sea salt
  • 1 teaspoon coarsely ground pepper
  • 4 red potatoes (halved)
  • 2 stalks green onions (cut into bite-sized lengths)
  • 2 charred lemon slices (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat dry the Cornish game hens with a paper towel and season generously with kosher salt and coarsely ground pepper.
  3. Mix the melted butter, olive oil, lemon juice, and minced garlic in a small bowl.
  4. Rub the mixture all over the hens, including inside the cavity.
  5. Stuff each hen with fresh sage leaves and a few lemon wedges.
  6. Arrange the halved red potatoes and remaining green onions around the hens in a baking dish.
  7. Roast in the preheated oven for about 1 hour or until the hens are cooked through and golden brown.
  8. Garnish with optional charred lemon slices before serving.
