Decadent Red Velvet Strawberry Cheesecake Delight at Home

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 cup heavy whipping cream
  • Fresh strawberries, halved
  • Whipped cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare your cake pans by greasing them lightly.
  2. Combine the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. Whisk the wet ingredients in a separate bowl: vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and white vinegar.
  4. Mix the dry and wet ingredients together by pouring the wet mixture into the dry, stirring until just combined.
  5. Pour the batter into your prepared cake pans evenly and bake for 25-30 minutes.
  6. Cool the cakes completely on a wire rack.
  7. Beat the cream cheese in a bowl until smooth.
  8. Add powdered sugar gradually, mixing until fully incorporated.
  9. Blend in vanilla extract and strawberry puree until fully combined.
  10. Whip heavy cream in a separate bowl until stiff peaks form.
  11. Fold the whipped cream gently into the cream cheese mixture.
  12. Layer the cake by placing one layer on your serving platter and spreading the cheesecake filling on top.
  13. Finish by placing the second layer on top and decorating with halved strawberries and optional whipped cream.
