- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 tablespoon red food coloring (gel preferred)
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 teaspoon vanilla extract
- 2 to 4 tablespoons milk (for glaze)
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix buttermilk, egg, melted butter, vanilla, vinegar, and red food coloring until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
- Let the batter rest for 5–10 minutes.
- Heat a nonstick skillet over medium-low and grease lightly with butter or spray.
- Scoop 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form, then flip and cook the other side.
- For the glaze, beat softened cream cheese until smooth, then mix in powdered sugar, vanilla, and milk to reach desired consistency.
- Stack pancakes, drizzle with glaze, and garnish with powdered sugar or berries if desired. Serve warm.
