1 ½ cups granulated sugar
1 cup vegetable oil
1 cup buttermilk, at room temperature
3 large eggs
2 tablespoons cocoa powder
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon vinegar
½ teaspoon salt
1 tablespoon red food coloring
Cream cheese frosting (for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a medium bowl, combine the flour, cocoa powder, baking soda, and salt. Whisk until well mixed.
In a large mixing bowl, beat the sugar and vegetable oil until smooth. Add the eggs one at a time, mixing well after each addition. Then stir in the buttermilk, vanilla extract, and red food coloring.
Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
Finally, mix in the vinegar, which will help the cake rise.
Pour the batter into the prepared loaf pan, smoothing the top.
Place in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 10-15 minutes. Then transfer it to a wire rack to cool completely.
Once the cake has cooled, frost it with cream cheese frosting as desired.
