This Quick and Easy Chicken Parmesan recipe features thinly pounded chicken breasts coated in a crispy blend of panko, Italian breadcrumbs, and Parmesan cheese, baked to perfection and topped with melted mozzarella and rich marinara sauce.

  • 1 Pound Boneless, Skinless Chicken Breast (pounded thin – approximately 2 breasts)
  • 1 Teaspoon Kosher Salt
  • 1/2 Teaspoon Ground Black Pepper
  • 2 Eggs
  • 1/3 Cup Panko Breadcrumbs
  • 1/2 Cup Italian Breadcrumbs
  • 2/3 Cup Parmesan Cheese (finely grated, plus more for garnishing)
  • Cooking Spray (of choice)
  • 1 24 Ounce Jar Marinara Sauce
  • 1 Cup Mozzarella Cheese (shredded)
  • Fresh Parsley (chopped, for garnishing, optional)

Instructions

  1. Start by preheating your oven to 425°F (220°C).
  2. Pat the chicken breasts dry with paper towels and pound them to about 1/2 inch thickness.
  3. Season both sides with kosher salt and ground black pepper.
  4. Whisk the eggs in a small bowl until smooth.
  5. Mix the panko breadcrumbs, Italian breadcrumbs, and finely grated Parmesan cheese in a separate bowl.
  6. Dip each chicken breast into the egg wash, then dredge in the breadcrumb mixture.
  7. Place the coated chicken breasts on a baking sheet, spaced apart.
  8. Lightly spray the tops with cooking spray and bake for 15 minutes.
  9. While the chicken bakes, spread marinara sauce on another baking sheet and sprinkle shredded mozzarella on top.
  10. Bake the sauce and cheese for 8-10 minutes until the cheese melts.
  11. If desired, broil for 1 minute for a browned topping.
  12. Transfer the chicken onto plates and spoon the marinara and melted cheese over the top.
  13. Garnish with chopped parsley if desired and serve immediately.
