Ingredients
Scale
1 cup pumpkin puree
1 cup granulated sugar
½ cup brown sugar, packed
½ cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 cup chopped walnuts or pecans (optional)
½ cup powdered sugar (for dusting)
Instructions
Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, softened butter, egg, and vanilla extract. Beat until smooth and creamy.
In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Fold in the nuts, if using.
In a small bowl, mix together the flour, brown sugar, softened butter, and cinnamon until crumbly. Set aside.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Sprinkle the streusel topping generously over each cookie.
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.
For an extra touch of sweetness, dust the cooled cookies with powdered sugar before serving.
