- 1 large round sourdough loaf (about 1 lb)
- 8 oz brie cheese, rind on or removed
- 1/2 cup whole berry cranberry sauce
- 2 tablespoons unsalted butter, melted
- 1 tablespoon olive oil (optional)
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 garlic clove, minced (optional)
- Pinch salt and black pepper, to taste
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment or lightly grease a cast iron skillet.
- Using a serrated knife, slice the sourdough loaf in a crosshatch pattern without cutting all the way through.
- Cut brie into cubes or slices and stuff evenly into the bread slits.
- Spoon cranberry sauce into the same slits, tucking some deep and leaving some on top for color.
- Mix melted butter, olive oil, garlic, rosemary, salt, and pepper. Brush generously into and over the bread.
- Tent the bread loosely with foil and bake for 15–20 minutes to start melting the cheese.
- Remove foil and bake uncovered for another 10–15 minutes until golden and bubbling.
- Sprinkle parsley on top and serve hot—no slicing needed, just pull apart!
