Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  2. Stir in the diced potatoes to the pot. Cook for a couple of minutes, allowing them to absorb the flavors.
  3. Add the vegetable or chicken broth. Bring it to a boil, then lower the heat to a simmer. Cook until the potatoes are tender, approximately 15-20 minutes.
  4. Use an immersion blender to puree the soup until smooth. If you want a chunkier texture, blend only half of the soup, leaving some potato pieces intact. Alternatively, you can transfer the soup in batches to a regular blender.
  5. Return the blended soup to low heat. Stir in the heavy cream and shredded cheddar cheese until fully melted and combined.
  6. Add salt and pepper according to your liking. If desired, adjust the consistency by adding more broth or cream.
  7. Once everything is well combined and heated through, remove it from the heat.
  8. Serve the potato cheese soup hot, garnished with your favorite toppings.
