Delicious Pistachio Mascarpone Layer Cake for Home Chefs

  • 1 cup shelled pistachios (unsalted)
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 3 large eggs, room temperature
  • 0.5 cup whole milk
  • 0.25 cup vegetable oil
  • 1 tsp vanilla extract
  • 0.25 tsp almond extract (optional)
  • 1.5 cups mascarpone cheese, cold
  • 1 cup heavy cream
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.5 cup chopped pistachios
  • white chocolate shavings or edible gold leaf (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your 9-inch round cake pans by greasing them or lining them with parchment paper.
  2. Combine the shelled pistachios with all-purpose flour, baking powder, and salt in a mixing bowl.
  3. Cream together the softened unsalted butter and granulated sugar in a separate bowl until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time to the butter mixture, mixing well after each addition.
  5. Stir in the whole milk, vegetable oil, vanilla extract, and almond extract (if using). Mix until just combined.
  6. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared cake pans, smoothing the tops with a spatula.
  8. Bake in your preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the cakes in the pans for 10 minutes, then carefully transfer them to a wire rack to cool completely.
  10. Whip the heavy cream with powdered sugar and vanilla extract in a clean bowl until stiff peaks form.
  11. Fold the cold mascarpone cheese into the whipped cream gently until well incorporated.
  12. Spread the mascarpone mixture over the top of one cooled cake layer, then place the second layer on top. Frost the top and sides generously.
  13. Garnish the cake with chopped pistachios on the top and sides.
  14. Optionally decorate with white chocolate shavings or edible gold leaf.
