Pistachio Kataifi Cookies: An Incredible Ultimate Recipe

  • 200g kataifi pastry
  • 1 cup shelled pistachios, finely chopped
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ cup honey
  • ¼ cup water
  • A pinch of salt
  • Chopped pistachios for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. If the kataifi pastry is frozen, thaw it at room temperature. Once thawed, gently separate the strands.
  3. In a large bowl, combine the chopped pistachios, melted butter, sugar, vanilla extract, ground cinnamon, and a pinch of salt. Mix well.
  4. Add the separated kataifi strands to the pistachio mixture, ensuring they are evenly coated.
  5. Take small portions of the mixture and shape them into cookie rounds or nests on the prepared baking sheet.
  6. Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the cookies are golden brown and crispy.
  7. While the cookies are baking, combine honey and water in a small saucepan over medium heat. Stir until the honey dissolves and the mixture simmers for about 5 minutes. Remove from heat and let cool slightly.
  8. Once the cookies are out of the oven, drizzle the honey syrup over them while they are still warm.
  9. If desired, sprinkle some chopped pistachios on top for added crunch and visual appeal.
  10. Allow the cookies to cool for about 10 minutes on the baking sheet before transferring them to a wire rack to cool completely.
