Decadent Pistachio Chocolate Lava Cakes to Wow Your Guests

  • 1/2 cup unsalted butter
  • 4 oz dark chocolate (60–70%)
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/4 cup chopped pistachios (optional garnish)

Instructions

  1. Prepare the lava center: Combine white chocolate chips, pistachio paste, heavy cream, and a pinch of salt in a bowl. Melt and stir until smooth, then let it cool to thicken slightly.
  2. Preheat the oven: Set your oven to 425°F (220°C) to ensure it’s hot enough for baking the cakes perfectly.
  3. Melt the chocolate: In a saucepan, melt the unsalted butter and dark chocolate together over low heat, stirring until the mixture is smooth. Remove from heat.
  4. Whisk the eggs: In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and salt until the mixture is pale and slightly thickened.
  5. Combine mixtures: Gradually add the melted chocolate mixture to the egg mixture, stirring gently until fully combined with no streaks.
  6. Fold in flour: Gently fold in the all-purpose flour just until incorporated; take care not to over-mix for a delicate cake texture.
  7. Prepare ramekins: Grease your ramekins with butter or non-stick spray and fill each about halfway with the chocolate batter, ensuring an even distribution.
  8. Add the pistachio center: Carefully add a spoonful of the cooled pistachio lava center into the middle of each filled ramekin, then top with more chocolate batter until almost full.
  9. Bake to perfection: Bake for 12-14 minutes or until the edges are set and the center is still slightly jiggly; it should look shiny and soft.
  10. Cool and serve: Let cool for about 1-2 minutes before dusting with cocoa powder and garnishing with chopped pistachios for an extra touch.
