  • 12 each raw oysters (in their shell or 1 pint of raw shucked oysters in their liqueur)
  • 2 tablespoons minced celery
  • 3 tablespoons minced onion
  • 2 tablespoons minced red bell pepper
  • 1 tablespoon minced garlic
  • 1 each minced scallion
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1/4 cup chardonnay (or other dry white wine)
  • 1/3 cup whipping cream
  • 1/4 cup reserved oyster liqueur (strained)
  • 3 tablespoons fresh breadcrumbs (divided)
  • 3 tablespoons grated parmesan cheese (divided)

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Melt the butter in a skillet over medium heat. Add the fresh celery, onion, red bell pepper, garlic, and scallions, then sauté until softened, about 5-7 minutes.
  3. Stir in the flour and cook for one minute. Gradually pour in the chardonnay and whipping cream, stirring until smooth.
  4. Add the reserved oyster liqueur and cook until the sauce thickens slightly, about 2-3 minutes.
  5. Fold in the oysters or place on half shells. Spoon the creamy mixture over the oysters.
  6. Top with breadcrumbs and parmesan cheese.
  7. Bake in the oven for about 10-12 minutes or until golden brown and bubbly.
