  • 1 tbsp olive oil
  • 1 lb smoked turkey or chicken sausage, sliced ¼ inch thick
  • 1 1/2 cups diced onion
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 14 oz can diced tomatoes
  • 1/2 cup heavy cream
  • 8 oz uncooked bowtie (farfalle) pasta
  • 1 1/2 cups shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • Sliced green onions for garnish (optional)

Instructions

  1. In a large skillet or pot, heat olive oil over medium heat.
  2. Add sliced sausage and cook until browned, about 5–6 minutes. Remove and set aside.
  3. In the same pot, add diced onion and sauté for 3 minutes until translucent.
  4. Add garlic and cook for another minute.
  5. Return sausage to the pot.
  6. Add chicken broth, diced tomatoes, heavy cream, and uncooked pasta. Stir to combine.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 12–15 minutes, or until pasta is tender and liquid is mostly absorbed.
  9. Stir in shredded cheddar cheese until melted.
  10. Season with salt and pepper to taste.
  11. Garnish with green onions and serve warm.

Notes

  • Swap cheddar for Monterey Jack or mozzarella for a different flavor.
  • Add a handful of spinach at the end for extra greens.
  • Adjust creaminess by adding more or less heavy cream.
  • For a spicier dish, add cayenne, red pepper flakes, or use spicy sausage.
  • If the sauce is too thick, add a splash of chicken broth or cream to loosen it.
