An exquisite Mother’s Day Pink Velvet Cake, featuring tender pink layers crowned with luscious cream cheese frosting. This heartfelt dessert is designed to make Mom feel cherished and adored.

Ingredients

  • 2 ½ cups cake flour
  • 1 ¾ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 4 large eggs (room temperature)
  • 1 cup buttermilk
  • 2 tsp pure vanilla extract
  • Red food coloring
  • Cream cheese frosting (see instructions for ingredients and preparation)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans, lining bottoms with parchment paper.
  2. In a large mixing bowl, whisk together cake flour, granulated sugar, cocoa powder, baking powder, and salt until combined.
  3. Cream softened butter and granulated sugar in a stand mixer on medium speed for 3-5 minutes until light and fluffy. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk buttermilk, vanilla extract, and red food coloring to achieve desired hue.
  5. Gradually add dry ingredients to the creamed mixture, alternating with buttermilk mixture. Mix until just combined.
  6. Divide batter among prepared pans. Bake for 25-30 minutes or until a skewer comes out clean.
  7. Cool cakes in pans for 10-15 minutes, then invert onto a wire rack to cool completely.
  8. Prepare cream cheese frosting by beating softened cream cheese and butter until fluffy. Gradually add sifted powdered sugar, then mix in vanilla extract and salt.
  9. Level the cooled cake layers and stack them with frosting in between. Apply a crumb coat and chill for 20-30 minutes.
  10. Frost the cake with a thicker layer of cream cheese frosting and decorate as desired.
  11. Store in an airtight container in the refrigerator. Allow to come to room temperature before serving.

  • Adjust food coloring to achieve preferred pink hue.
