Quick Mediterranean Ground Beef and Veggie Stir Fry is a vibrant, satisfying one-skillet meal packed with protein, vegetables, and flavor. It’s perfect for busy weeknights or healthy meal prep.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (85–90%)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium zucchini, sliced into half-moons
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Optional: Juice of 1/2 lemon

Instructions

  1. Wash and chop all vegetables: dice onion, slice zucchini and bell peppers, mince garlic, and chop parsley.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Season with salt, pepper, and cumin. Drain excess fat if necessary.
  3. Push beef to the side of the skillet. Add chopped onion and garlic with a splash more oil. Sauté for 2–3 minutes until softened and fragrant.
  4. Add zucchini and bell peppers to the pan. Sprinkle with oregano, more cumin, and a pinch of salt. Stir well.
  5. Cook vegetables for 7–8 minutes until tender-crisp, stirring occasionally.
  6. Mix everything together, remove from heat, and stir in chopped parsley and optional lemon juice.
  7. Taste and adjust seasoning. Let rest for 2 minutes before serving.
  8. Serve hot on its own or with couscous, rice, pita, or salad.
