  • 6 tablespoons unsalted butter

Instructions

  1. Peel the sweet potatoes and cut them into evenly sized chunks for even cooking.
  2. Place in a large pot, cover with cold water, and add salt. Bring to a boil, then simmer 15–20 minutes until fork-tender.
  3. Drain the potatoes well and let them rest for a minute to release extra moisture.
