Masala Chai Ice Cream is a rich, creamy dessert blending the aromatic spices of Indian masala chai with homemade ice cream. Infused with black tea, cardamom, cloves, cinnamon, and ginger, it offers a unique balance of warm spices and sweet creaminess for a refreshing treat.

Ingredients

  • 2 black tea bags
  • 6 whole cardamom pods
  • 12 whole cloves
  • 3 whole star anise
  • 1/4 teaspoon whole black peppercorns
  • 3 whole cinnamon sticks
  • 1/2 inch (1.5cm) fresh ginger root
  • 1 cup (250ml) full cream milk
  • 2 cups (500ml) thickened cream
  • 4 large egg yolks
  • 1/2 cup (120g) castor sugar
  • 1 tablespoon mild flavoured honey

Instructions

  1. Warm the full cream milk gently until hot but not boiling. Add the black tea bags, turn off the stove, and steep for 3.5 minutes. Remove tea bags.
  2. Whisk egg yolks until smooth, then add castor sugar. Beat until pale and creamy.
  3. Gradually temper the eggs by slowly adding the warm chai milk mixture in thirds, whisking constantly.
  4. Transfer the mixture to a double boiler or a heatproof bowl over simmering water. Add whole spices (cardamom, cloves, star anise, black peppercorns, cinnamon), fresh ginger, and honey.
  5. Stir over low to medium heat until the mixture thickly coats the back of a spoon.
  6. Remove from heat, let cool slightly, then transfer to a container and chill in the refrigerator for at least 4 hours, preferably overnight.
  7. Strain the chilled mixture through a fine sieve.
  8. Churn the strained mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft serve consistency.
  9. Transfer the Masala chai ice cream to a pre-chilled container and freeze until firm, about 4-6 hours.
  10. Serve chilled, optionally with a drizzle of honey.
