  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 cup sun-dried tomatoes, chopped
  • 4 cups low-sodium chicken broth
  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups spinach, chopped
  • Cooked pasta
  • Cooked rice
  • Crusty bread for serving

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add diced onion and cook 3–4 minutes. Add garlic, crushed red pepper flakes, Italian seasoning, salt, and black pepper. Cook 1–2 minutes until fragrant.
  2. Stir in chopped sun-dried tomatoes, then pour in the chicken broth. Bring to a gentle boil.
  3. Place chicken breasts in the pot. Cover and simmer 20–25 minutes until tender.
  4. Remove chicken, shred with two forks, and return to the soup.
  5. Lower heat and stir in heavy cream and parmesan until melted and smooth. Simmer 5 minutes.
  6. Stir in chopped spinach and cook 1–2 minutes until wilted.
  7. Adjust seasoning as needed. Serve hot with optional pasta, rice, or crusty bread.
