  • 1/3 cup pure maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup chopped walnuts, lightly toasted
  • 1 tablespoon fresh thyme leaves (plus extra for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or silicone mat.
  2. Peel and slice sweet potatoes into 1/2-inch thick rounds.
  3. In a small saucepan, gently warm maple syrup, olive oil, cinnamon, nutmeg, cayenne, salt, and pepper until blended.
