Loukoumades are traditional Greek honey puffs drizzled with cinnamon chocolate and topped with pistachios.

Ingredients

  • 1 1/2 cups lukewarm water
  • 1/3 cup (70 g) granulated sugar
  • 1 tablespoon (11 g) active dry yeast
  • 2 cups (240 g) all-purpose flour
  • Zest of 1 medium lemon
  • 1/2 teaspoon kosher salt
  • Cooking spray
  • 8 cups vegetable oil
  • 1/2 cup (85 g) semisweet chocolate, melted
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon honey
  • 1/4 cup (38 g) pistachios, chopped

Instructions

  1. In a large bowl, stir together lukewarm water, granulated sugar, and active dry yeast. Let sit for about 5 minutes until foamy.
  2. In a separate bowl, mix all-purpose flour, lemon zest, and kosher salt. Add to the yeast mixture and beat until smooth and elastic, about 2 minutes.
  3. Cover the bowl with plastic wrap sprayed with cooking spray and let rise in a warm spot for about 1 hour and 10 minutes.
  4. Melt the semisweet chocolate and stir in ground cinnamon. Keep warm.
  5. Heat vegetable oil in a pot to 350° to 360°F (175° to 182°C). Scoop about 1 tablespoon of dough, form into a round shape, and fry for 4 to 5 minutes until golden brown.
  6. Drain on paper towels. Drizzle with warm cinnamon chocolate, then honey, and sprinkle with chopped pistachios. Serve warm.

Notes

  • Best served warm.
  • Can substitute honey with maple syrup for a different flavor.
  • Ensure oil temperature is maintained for even cooking.
