1 1/2 cups lukewarm water
1/3 cup (70 g) granulated sugar
1 tablespoon (11 g) active dry yeast
2 cups (240 g) all-purpose flour
Zest of 1 medium lemon
1/2 teaspoon kosher salt
Cooking spray
8 cups vegetable oil
1/2 cup (85 g) semisweet chocolate, melted
1/4 teaspoon ground cinnamon
1 tablespoon honey
1/4 cup (38 g) pistachios, chopped
Instructions
In a large bowl, stir together lukewarm water, granulated sugar, and active dry yeast. Let sit for about 5 minutes until foamy.
In a separate bowl, mix all-purpose flour, lemon zest, and kosher salt. Add to the yeast mixture and beat until smooth and elastic, about 2 minutes.
Cover the bowl with plastic wrap sprayed with cooking spray and let rise in a warm spot for about 1 hour and 10 minutes.
Melt the semisweet chocolate and stir in ground cinnamon. Keep warm.
Heat vegetable oil in a pot to 350° to 360°F (175° to 182°C). Scoop about 1 tablespoon of dough, form into a round shape, and fry for 4 to 5 minutes until golden brown.
Drain on paper towels. Drizzle with warm cinnamon chocolate, then honey, and sprinkle with chopped pistachios. Serve warm.
Notes
Best served warm.
Can substitute honey with maple syrup for a different flavor.
