1 pound flank steak
1/4 cup lime juice (freshly squeezed)
1/4 cup olive oil
2 cloves garlic (minced)
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh cilantro (chopped)
8 small corn tortillas
1 avocado (sliced)
1/2 cup diced onions
1/2 cup diced tomatoes
Lime wedges (for serving)
Instructions
In a bowl, combine lime juice, olive oil, minced garlic, chili powder, cumin, salt, and black pepper. Add the flank steak and coat it evenly. Cover and let it marinate in the refrigerator for at least 30 minutes.
Preheat your grill or skillet over medium-high heat. If grilling, ensure the grates are clean and lightly oiled.
Remove the steak from the marinade, allowing excess to drip off. Place it on the grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time to your preferred doneness.
Once cooked, remove the steak from the heat and let it rest for 5-10 minutes.
After resting, slice the steak against the grain into thin strips.
While the steak is resting, warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side.
Place a few slices of steak onto each tortilla. Top with diced onions, tomatoes, and fresh cilantro.
Add slices of avocado on top.
Squeeze fresh lime juice over the tacos.
Serve immediately while the tacos are warm and flavorful.
