  • 3/4 cup granulated sugar
  • 1 large egg

  • 1 1/2 cups lemon curd (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Mix in flour and salt until a soft dough forms.
  4. Scoop dough into muffin cups and press along bottom and sides to form cups.
  5. Bake 12–14 minutes until edges are lightly golden.
