  • 4 beef loin/sirloin chops (1-inch thick, 2.53 lbs)
  • 2 tbsp olive oil, divided
  • 2 tbsp unsalted butter, divided
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup apple butter
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/4 tsp ground cinnamon (optional)
  • Salt & black pepper, to taste
  • 2 tbsp all-purpose flour
  • 1 large apple (Granny Smith/Fuji), sliced (optional garnish)
  • Fresh parsley/thyme, chopped (garnish)
  • Heavy cream, for richer sauce (optional)

Instructions

  1. Pat beef chops dry, then season generously with salt and black pepper. Let chops rest at room temperature for 20-30 minutes while preparing other ingredients (slice onion, mince garlic, measure liquids and spices).
  2. Heat 1 tbsp olive oil and 1 tbsp unsalted butter in a large, heavy-bottomed skillet over medium-high heat. Sear two beef chops for 3-4 minutes per side until a deep golden-brown crust forms. Remove and set aside. Repeat with remaining chops, adding more oil and butter if needed.
  3. Reduce heat to medium. Add sliced onion to the same skillet, sauté for 5-7 minutes, scraping up browned bits, until softened. Add minced garlic and cook for another minute until fragrant.
  4. Sprinkle 2 tbsp all-purpose flour over the onions and garlic, stirring continuously for 1-2 minutes to cook out the raw flour taste.
  5. Gradually whisk in 1 cup beef broth until smooth. Stir in 1/2 cup apple butter, 2 tbsp apple cider vinegar, 1 tbsp Worcestershire sauce, and 1 tbsp soy sauce.
  6. Add 1 tsp smoked paprika, 1/2 tsp dried thyme, and 1/4 tsp optional ground cinnamon to the sauce. Bring to a gentle simmer for 2-3 minutes to meld flavors and thicken. Taste and adjust seasoning with salt and pepper. Optionally, stir in a splash of heavy cream for a richer sauce.
  7. Return seared beef chops to the skillet, nestling them into the simmering apple butter sauce. Reduce heat to low, cover, and simmer gently for 45-60 minutes, or until chops are fork-tender. Flip chops halfway through cooking.
  8. If using, sauté sliced apple garnish in a separate small skillet with 1/2 tsp butter for 2-3 minutes per side until slightly softened and lightly browned.
  9. Remove skillet from heat and let chops rest in the sauce for 5-10 minutes before serving. Serve beef chops with ample apple butter sauce, garnished with sautéed apple slices and fresh chopped parsley or thyme.
