  • 4 eggs, separated
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup all-purpose flour
  • 1 ¾ cups whole milk, warm
  • ½ cup fresh lemon juice (from 23 lemons)
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 325°F (160°C). Grease or line an 8×8-inch pan with parchment paper.
  2. Divide egg whites and yolks into separate bowls. Set the whites aside for later.
  3. In a large bowl, whisk yolks with sugar until pale and creamy.
  4. Mix in melted butter, lemon juice, zest, and vanilla extract until smooth.
  5. Add flour and salt, then slowly whisk in warm milk until the batter is smooth and thin.
  6. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold into the batter in batches without overmixing.
  7. Pour into the prepared pan and bake for 45–55 minutes, or until golden on top with a slight jiggle in the center.
  8. Allow to cool completely, then dust with powdered sugar and slice into squares before serving.
