Transform your dinner table with this irresistible garlic parmesan chicken meatloaf. A lighter, yet incredibly moist and flavorful take on a classic comfort food, perfect for any occasion.

  • 1 lb ground chicken
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1 cup grated Parmesan cheese
  • 1 medium onion, diced
  • 4 cloves fresh garlic, minced
  • 2 large eggs
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×5 inch loaf pan or line a baking sheet with foil.
  2. Mince onion and garlic. In a large mixing bowl, lightly beat 2 large eggs. Whisk in 2 tbsp soy sauce. Add diced onion and minced garlic.
  3. Add 1 cup breadcrumbs, 1 cup grated Parmesan cheese, 1 tsp salt, and 1 tsp black pepper to the wet mixture. Mix well.
  4. Add 1 lb ground chicken to the bowl. Gently combine all ingredients with your hands until just mixed, being careful not to overmix.
  5. Transfer the chicken mixture to your prepared loaf pan or form into a freeform loaf on the baking sheet. Do not pack too tightly.
  6. Bake for 60-75 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer in the thickest part.
  7. Remove from oven, tent loosely with aluminum foil, and let rest for 10-15 minutes before slicing. Slice into generous portions and serve with your desired sides. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
